How should I check risk before dental work in Mexico?

Do US dentists honor Mexican dental work if something goes wrong?
Sometimes yes, sometimes no. Ask before booking how any repair would be handled after you return home: written warranty duration, exclusions, whether rework must happen at the original clinic, and whether travel or a US-side dentist is covered. Do not assume a US dentist will honor or repair foreign dental work under the original warranty. Missing written warranty and aftercare terms should make you slow down before paying a deposit.
Can I combine dental treatment with a vacation?
It can make logistical sense for Cancún if the case is large enough and recovery restrictions are respected, and it can be reasonable for Tijuana if you combine it with San Diego.
